Ingredients
- 1 (5-7 lb) bone-in pork butt or pork shoulder
- 1 tbsp liquid smoke
- 1 tbsp Hawaiian sea salt (coarse sea salt or kosher salt also work)
Directions
- Set the pork roast in the slow cooker fat side up, cutting it down if you need to make it fit.
- Pour the liquid smoke over the pork, then sprinkle on the salt, rubbing both over the surface of the meat.
- Do not add any water. The pork releases plenty of liquid as it cooks.
- Cover and cook on LOW for 9-12 hours. Overnight works well. The more marbled the roast, the more tender it comes out.
- Shred the pork with two forks right in the slow cooker and stir it through the juices at the bottom. Serve hot with rice and macaroni salad.
