Slow Cooker Beef and Broccoli

Ingredients

  • 1 1/2 lbs beef stew meat or chuck roast, cut into bite-sized strips
  • 1 cup beef stock
  • 1/3 cup low sodium soy sauce
  • 3 tsp minced garlic
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 14 oz frozen broccoli florets
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • Cooked rice, for serving
  • 1 tbsp toasted sesame seeds (optional)

Directions

  1. Add the beef to a 5-6 quart slow cooker.
  2. Whisk the beef stock, soy sauce, garlic, honey, and sesame oil together in a bowl and pour it over the beef.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until the beef is tender.
  4. Stir the cornstarch and cold water together in a small bowl to make a slurry.
  5. About 20 minutes before serving, uncover and stir in the cornstarch slurry along with the frozen broccoli. Cover and finish cooking on HIGH until the sauce thickens and the broccoli is bright and tender.
  6. Serve over rice, spooning the sauce from the slow cooker over the top. Sprinkle with sesame seeds if you like.
