Ingredients
- 1 lb Italian sausage (4 links, sweet or hot)
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tsp canola oil
- 1/2 cup water or chicken stock
- Kosher salt
- Red pepper flakes (optional)
- Italian rolls, pasta, or rice, for serving
Directions
- Heat the canola oil in a 12-inch cast iron skillet over medium-high heat until it just begins to smoke.
- Poke several holes in each side of the sausages with a fork so they do not burst.
- Lay the sausages in the hot skillet and scatter the sliced peppers and onions around them. Stir the vegetables to coat them in the oil.
- Brown the sausages about 4 minutes per side, until they have good color.
- Pour in the water or stock and cover the skillet immediately. Lower the heat to medium-low and cook, covered, about 10 minutes, until the sausages reach 160°F inside.
- Uncover and move the sausages to a plate. Turn the heat up, season the peppers and onions with salt, and cook a few minutes more to cook off the extra liquid.
- Spoon the peppers and onions over the sausages. Serve on Italian rolls, over pasta or rice, or on their own.
