Easy Lo Mein
20 min
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 3 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1 garlic clove, grated
- 4-6 oz uncooked ramen or lo mein noodles
- 1 tbsp sesame oil
- 3 green onions, chopped, white and green parts separated
- 2-3 cups julienned or chopped vegetables (carrots, red pepper, cabbage, bok choy, mushrooms, broccoli)
- 1-2 tbsp mirin
- Shake or whisk all the sauce ingredients together in a jar and set aside.
- Cook the noodles according to the package directions, then drain and set aside.
- Heat the sesame oil in a large skillet or wok over medium-high heat. Add the white parts of the green onions and the vegetables and stir fry about 5 minutes, until just fork-tender.
- Add the mirin to deglaze the bottom of the pan, scraping up anything stuck on.
- Add the drained noodles and about half the sauce and toss to combine. Add more sauce until the noodles are an even medium brown.
- Top with the green parts of the green onions and serve. To add chicken, pork, beef, or shrimp, stir fry it first, set it aside, and toss it back in at the end.
